Here are the next five of the 10 Super Foods!
Salmon, wild-caught only, is a rich source of those highly sought after fish oils everyone talks about. Fish oil stays liquid at
very cold temperatures (like, the ocean, for instance), which means that they are very flexible and healthy - just what your brain craves!
Wild-caught salmon is sustainable and naturally antibiotic-free, unlike farmed salmon. And it tastes way better. It is one of my favorites
of the 10 super foods.
Simply season up some salmon steaks with salt and pepper and pop them on the grill. Salmon doesn't need to be cooked terribly long; just
until the inside is a smidge pink, and moist and flaky. You might even consider getting some sashimi grade salmon and having it raw, in
sushi.
Spinach is truly a super health food. It is packed with vitamins and minerals, among which are calcium, manganese, and iron, and also vitamin A and vitamin K. Folate too, and vitamin C!
The beautiful thing about spinach is its versatility. Raw, it makes a delightful spinach salad - classic with crumbled bacon and boiled
eggs. What about a spinach pesto? Or you can steam it up and make eggs florentine, spanikopita, or throw some into your pasta sauce. It is
even great on pizza, with ricotta and mozzarella. It freezes well too: I always keep a couple boxes of frozen spinach in my freezer, to
health up and yum up practically any dish.
Tomatoes, ahhhh tomatoes. Rich in the highly praised lycopene, they are also brimming with vitamin C. Lycopene is believed to help
ward off cancer, specifically lung and stomach. It also has magnificent antioxidant effects. And good news: Eating a small amount of fat
with your tomatoes helps the lycopene get absorbed more efficiently. Bring on the lasagna! (Lycopene is even more concentrated in products
like tomato pastes and sauces.)
Tomatoes are a staple in our diet: Red sauce, salsa, salads. I like making "moonblush tomatoes" (a la Nigella Lawson), where you chop your
tomatoes onto a baking pan, sprinkle with salt, pepper, basil/oregano, and a whisper of sugar, then pop into a 400 degree oven and promptly
turn the heat off. Let them hang out there overnight, and the next day you have salad awesomeness.
Vegetables of all colors provide a myriad of vitamins and minerals, as well as fiber. One of the best things you can do for yourself
is aim to have at least 5 servings of vegetables each day. Try having one "salad meal" each day, to set yourself on the right track.
Getting a weekly CSA box is a great way to increase your
vegetable intake as well. It is exciting to see what you get each week, learn
about new vegetables, and try new recipes. Plus, you are supporting local agriculture in the process, and your produce is muuuuuuch fresher
than the regular grocery store.
Garlic is one of the world's best natural antibiotics. If you start brewing an infection of any kind, double or triple up on the
garlic. The proverbial chicken soup is an excellent vehicle for said garlic - just put an insane number of garlic cloves into an otherwise
normal batch of chicken soup, and enjoy with pleasure and health. Another way to ingest the bug-fighting garlic is to crush up a few cloves
and mix them into plain yogurt.
Garlic is delightful even when you aren't sick. It is the kick needed in many wonderful foods; I put garlic in nearly everything I cook. I
get fresh garlic every week, and have discovered there is nothing better than garlic fresh from the farm. And, you must try "green garlic",
which is garlic that is harvested early, and used like scallions: Heavenly and mild. The 10 Super Foods list would NOT be complete
without this natural wonder included. All hail the garlic!
